Happy Day Cake with Fluffy Frosting

Yogurt provides a necessary balance to the cake’s sweetness as well as helps to provide a fluffy crumb.
The combination of butter and oil provides great flavour and helps the cake stay moist and tender for longer.

Happy Day Vanilla Cake with Fluffy Frosting
Ingredients
For the cake
- 1/4 cup unsalted butter, room temperature
- 1/4 cup neutral oil such as canola
- 3/4 cup white sugar
- 1 large egg
- 1/2 cup plain yogurt or sour cream
- 1/4 cup milk
- 1 1/4 cup all purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 2 tsp vanilla extract
- 2 Tbsp colourful sprinkles
For the frosting
- 1/2 cup unsalted butter, room temperature
- 1/2 cup cream cheese, room temperature
- 1 cup icing sugar, sifted
- 1 tsp vanilla
- ¼ tsp salt
- A few swipes of lemon zest, optional
Instructions
- Pre-heat oven to 350. Line a 9 inch cake pan with a round of parchment paper, anchored with a smear of room temperature butter. Grease edges of pan with butter.
- In a large bowl, combine sugar, butter, oil, and egg and beat with a hand mixer until light and fluffy, 2-3 minutes. Whisk in yogurt, milk and vanilla.
- Overtop of the wet ingredients, sift flour, baking powder and salt. Fold mixture until almost combined. Add sprinkles and continue folding until just combined. Don’t overmix.
- Bake for 28-32 minutes or until an inserted toothpick comes out clean. Allow to cool in pan.
- To make icing, beat butter and cream cheese with a hand mixer on high until light and fluffy about 3 minutes, scraping down the bowl down at least once. Add in sifted icing sugar, vanilla, and lemon zest and beat for another minute.
- Dollop on cooled cake and smooth over with the back of a spoon. Decorate as you please. Devour.
