Leo Dessert: Sunflower Croquembouche

This is the seventh creation in my zodiac dessert series where I design a delicious dessert for each sign.

This is for Leo.

A tall croquembouche filled with vanilla bean and sunflower seed butter creme diplomat and adorned with sunflowers.

The life of the party. The epitome of celebration. A symbol of luxury, indulgence, power and glamour. A Leo is a croquembouche personified.

There is no such thing as one-upping a croquembouche, which sounds perfect to any true Leo. This success-driven sign is ambitious and only goes places where they will be admired. A croquembouche can simply enter a room and demand most of the attention. Anyone who isn’t impressed by one is just foolish. It’s adorned with gold and glistens with every element perfectly in place.

Leos are ruled by the sun, which explains their centre-of-the-universe ego but also their strength in giving energy to everyone around them. They love to help others and share with generosity, and this dessert is made to share in the most dramatic way possible. Leos are also thoughtful gift givers, and a croquembouche is the most thoughtful and giving a dessert could get.

Leos are a fixed sign, meaning they are stabilizers and are foundation builders. Supported by a caramel foundation are dozens of cream puffs. A croquembouche is simply not very forgiving, and Leos are also known for this quality. If you wrong a Leo, don’t expect for that relationship to work out. I felt this strongly making my croquembouche on a very humid day in Halifax. I’ll show myself out.
