Libra Dessert: Balanced Honey Lavender Tart
This is the ninth creation in my zodiac dessert series where I design a delicious dessert for each sign.
This is for Libra.
Libra
A pastry tart shell is stood on its side and filled with a white chocolate lavender mousse and adorned with salted honeycomb and hard honey flower petal candies.
As the peacekeepers of the zodiac, this dessert had to strike a balance not just visually, but in taste and texture as well: floral, sweet, salty, creamy and crunchy. Although they are stable on the outside, Libras are known for hiding their pain and inner turmoil. At first glance this dessert is composed and calm, but is incredibly easy to knock off its centre of gravity, crumbling into pieces.
Pretty and elegant like all Libras, this dessert is sure to charm anyone who comes their way (they know that a little extra sparkle is not to be underestimated when it comes to the art of persuasion). Libras are the first to suggest an $18 over-the-top cocktail to enjoy the intricate garnishes or to order a fancy plated dessert at the end of a romantic meal. Speaking of romance, it would be an injustice (they would know) to not include flowers into this dessert. Libras not only appreciate excitement and sentimentality of love, but of all the finer things in life.
Lavender and honey play together beautifully in this dessert, but I wasn’t sure the best way to incorporate the flavours. Honey comb or candy? Comb or candy, comb or candy? I couldn’t decide, and we I certainly couldn’t expect any Libra to help make this (or any) decision. Shady, I know, but Libras aren’t a stranger to that either.
