Chocolate & Potato Chip Cookies
Ingredients
- ½ cup unsalted butter
- ½ cup brown sugar
- ½ cup white sugar
- 1 egg
- 1 tsp vanilla
- 1 ⅓ cup flour
- ½ tsp baking soda
- 1 cup chocolate chips
- 1 ½ cups crushed potato chips, divided
- Flakey salt for garnish
Instructions
- In a medium pot on medium heat, cook the butter until it foams and then browns, about 5 minutes. Make sure to stir often with a wooden spoon and to scrape the bottom of the pot to avoid burning the milk solids. Pour into a large mixing bowl and set aside to cool for 5 minutes.
- Add sugars, egg, and vanilla to the bowl and mix until well combined.
- Add flour and baking soda and fold until almost completely combined. Add in chocolate chips and ½ cup of crushed potato chips and fold until they are well distributed. Put dough in the fridge to rest for at least 30 minutes.
- When dough has rested, preheat your oven to 350 and line 2 baking sheets with parchment paper. Scoop out cookies using a tablespoon measuring spoon, making each cookie two scoops. You should get 16 cookies.
- Roll each cookie in your palms to create a round shape, then coat the exterior in your remaining crushed chips. You may need to push them into the cookie to get them to stick.
- Arrange the cookies on your baking sheets and bake for 10-12 minutes or until just golden around the edges. Garnish with salt right out of the oven. Enjoy!
