Sweet Potato Chocolate Pudding
Will I ever wrap a burger in lettuce? No. Will I ever suggest zucchini or cauliflower can replace pasta or rice? Absolutely not. Will I capitalize on the sweetness and smoothness of sweet potato and mask it with chocolate and sugar? Yes.
I just love this recipe for breakfast, snacks or dessert. It’s so smooth, silky, and rich. I love to added vitamins from the sweet potato but above all, it’s just delicious.
Sweet Potato Chocolate Pudding
Ingredients
- 1 medium sweet potato, boiled
- 1 cup full fat coconut milk
- 1/4 cup cocoa
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- Pinch salt
Instructions
- Blend all ingredients in a blender until fully smooth, approximately 2 minutes. Make sure to stop the blender to scrap down half way through.
- Store in a fridge for up to 4 days. Serve chilled.
