Toasted Sesame Banana Bread with Crunchy Seed Topping
Everyday banana bread can be a little bit, dare I say it, boring.
Sometimes, and when I say that I pretty much mean all the time, I want to add tahini to everything. I love the combination of tahini and banana so much that I wanted to take it further. This recipe includes a touch of toasted sesame oil and a crunchy sugary sesame seed topping.
Yield: 8-10
Sesame Banana Bread
Ingredients
- 1 ½ cups all purpose flour
- 1 tsp salt
- 1 tsp baking soda
- ½ tsp ground cardamom
- 3 large very ripe bananas
- ⅓ cup melted butter, coconut oil or vegetable oil
- 1 tsp toasted sesame oil
- 2 eggs
- ⅓ cup tahini
- ⅓ cup granulated sugar, plus extra for sprinkling
- ⅓ cup brown sugar
- 2 tsp vanilla extract
- white & black sesame seeds for sprinkling
Instructions
- Preheat oven to 350º
- Line a loaf pan with parchment paper or lightly coat with oil
- In one bowl, combine flour, baking soda, salt, cardamom, and and whisk together.
- In another bowl, mash bananas with a fork until smooth. Add oil, sesame oil, eggs, tahini, vanilla, and both sugars. The tahini may cause the mixture to seize and thicken, but continue mixing until well combined and smooth.
- Add the dry ingredients into the wet ingredients and fold to combine until no lumps of flour are left.
- Bake for 45-50 minutes or until a toothpick comes out clean with crumbs.
