Anything Goes Herby Cheese Tart
This tart is perfect for throwing together something beautiful and delicious with whatever herbs, cheese, and vegetable you have in the fridge. I love making this throughout the summer with whatever looks special at the farmers’ market.
Anything Goes Herby Cheese Tart
Ingredients
For the herb cheese mixture
- 1/2 c soft cheese such as goat cheese, cream cheese or ricotta
- 1/2 c shredded cheese of choice or feta
- 1 egg, lightly beaten
- 1/4 c finely chopped herbs, garlic scapes and/or green onions
- Salt & pepper to taste
For tart assembly
- 1 sheet of puff pastry, thawed in the fridge overnight
- Vegetables of choice (asparagus, leeks, or cherry tomatoes are great choices)
- All purpose flour for rolling
Instructions
- With a rolling pin, roll out puff pastry on a floured surface into a 10"x14" rectangle. The puff pastry will be sticky so use flour generously and work quickly. Using a knife, score a 1 inch border around the perimeter. Brush the border with your beaten egg, and set the rest of the egg aside. Carefully transwer puff pastry on a parchment paper lined baking sheet and put in fridge.
- Combine cheeses and herbs/scapes/green onions, season and taste. The seasoning will depend on the cheeses you're using. Once you're happy with the seasoning, add remaining egg and mix. It should be thick but spreadable. If it's too thick, you can add a small amount of sour cream, plain yogurt or milk.
- Remove your puff pastry from the fridge and spread your herb cheese mixture evenly across the surface and up to the scored edge. Arrange your vegetables on top. Put back in fridge to chill and preheat oven to 400.
- Once preheated, bake for 20 minutes. Slice and serve.
