For me, the perfect lunch is one that takes 5 minutes and is filling, uses ingredients I always have, and tasty as heck.

This instant ramen hack is a tasty, thai-inspired pantry meal that’s perfect for rent week or when low on groceries. Use whatever veggies and protein you have on hand!

Peanut Butter Ramen Hack

Ingredients

Ramen
  • 1 package of instant ramen 
  • 1 ½ c water
  • ½ c broccoli florets
Sauce
  • 2 tablespoons smooth peanut butter
  • ¼ c hot water
Toppings
  • 1 boiled egg, boiled for 9 minutes, cooled and peeled
  • 1 scallion, sliced
  • ¼ c cabbage, shredded
  • 2 toasted nori snacks
  • 1/2 teaspoon chili oil or hot sauce

Instructions

  1. In a pot, add your ramen, flavour package and broccoli florets with water until it reaches a boil. Only add enough water just to cover. Cook for 2 minutes.
  2. Meanwhile, make your sauce. Combine peanut butter and hot water in a small bowl and stir until well combined.
  3. Once your ramen in cooked, add your peanut sauce and stir to combine.
  4. Pour your ramen to a bowl and add toppings.
  5. Serve immediately.
