Peanut Butter Ramen Hack
For me, the perfect lunch is one that takes 5 minutes and is filling, uses ingredients I always have, and tasty as heck.
This instant ramen hack is a tasty, thai-inspired pantry meal that’s perfect for rent week or when low on groceries. Use whatever veggies and protein you have on hand!

Peanut Butter Ramen Hack
Ingredients
Ramen
- 1 package of instant ramen
- 1 ½ c water
- ½ c broccoli florets
Sauce
- 2 tablespoons smooth peanut butter
- ¼ c hot water
Toppings
- 1 boiled egg, boiled for 9 minutes, cooled and peeled
- 1 scallion, sliced
- ¼ c cabbage, shredded
- 2 toasted nori snacks
- 1/2 teaspoon chili oil or hot sauce
Instructions
- In a pot, add your ramen, flavour package and broccoli florets with water until it reaches a boil. Only add enough water just to cover. Cook for 2 minutes.
- Meanwhile, make your sauce. Combine peanut butter and hot water in a small bowl and stir until well combined.
- Once your ramen in cooked, add your peanut sauce and stir to combine.
- Pour your ramen to a bowl and add toppings.
- Serve immediately.
