Dumb question: any salted caramel fans out there?

Did you know that honey and cream could be transformed into the simplest and most delicious salty taffy candies? Sometimes I feel bad masking the delicate flavour of honey in anything that could mask it, but these 3 ingredient taffy candies let the floral notes of honey shine!

Honey Taffy

Ingredients

  • 1 cup honey
  • 1/3 cup heavy cream
  • Flakey salt

Instructions

  1. Prepare a plate for the taffy by coating liberally in butter or neutral oil. Set aside.
  2. In a pot, mix ingredients until incorporated. Heat on medium with a candy thermometer attached. Do not stir the mixture after you turn the heat on. You can swirl carefully by rotating the pot with your hand on the handle. Watch carefully and do not walk away as the mixture could boil over or burn. Cook the mixture until it reaches 280, or the soft crack stage. Pour immediately onto your prepared plate.
  3. Wait 5-10 minutes until caramel is cool enough to handle with your hands. You can stir with a spoon to help mixture cool evenly. Coat hands in butter or oil and take the mixture in your hands and begin to pull by stretching it between your hands and folding together. Repeat. The first 2 minutes will be messy, but it will come together. Pull for about 10 minutes until the mixture is light tan in colour and becomes difficult to pull.
  4. On sheet of parchment paper, pull caramel into log shapes. Roll in between hands until they are even cylinders. You can spin each end to create a rope effect. Sprinkle with salt. Snip with scissors into desired candy size while the mixture is warm. Wrap in parchment or wax paper after they have cooled.
  5. Additional add-ins: Add vanilla extract, cinnamon, cardamom, or toasted nuts into the pot before you pour the mixture onto your greased plate.
